Autumn Glow Salad

This salad is not just for Autumn - it is for any festivity. A vibrant, salad that balances sweet, citrusy, and savory flavors—perfect as a light meal or an elegant and healthy side. Bring it to a gathering, or add it to your banquet when hosting.
It's easy, healthy, and full of flavor!
Ingredients:
- 4–5 cups mixed salad greens
- ½ cup crumbled feta cheese
- ½ cup pomegranate arils
- ⅓ cup walnuts, toasted with salt, pepper, olive oil and Fig Balsamic Vinegar (optional)
- ½ cup of crisp bacon (chopped)
- ½ cup of Blood Orange Olive Oil
- ¼ cup of Maple Balsamic Vinegar
Instructions:
- In a large bowl, add the mixed greens
- Top with feta cheese, pomegranate arils, bacon and toasted walnuts
- In a small bowl, whisk together the Blood Orange Olive Oil and Maple Balsamic Vinegar
- Drizzle the dressing over the salad just before serving
- Toss gently and enjoy!-
