Light Cole Slaw

A fresh, crisp side dish made with finely shredded cabbage and carrots, tossed in a light, refreshing dressing rather than a heavy mayo base. Great for BBQ season!
Easy, healthy, and without the guilt.
Ingredients:
- 4 cups green cabbage, finely shredded
- 1 cup purple cabbage, finely shredded (optional)
- 1 medium carrot, grated
For the dressing:
- 1/2 cup Basil Infused Olive Oil
- 1/4 cup Rosé Balsamic Vinegar
- 1 tsp Dijon mustard
- 1–2 tsp honey or maple syrup (to taste) (optional)
- Salt and pepper, to taste
Instructions:
- In a large bowl, combine the shredded cabbage and carrot.
- In a small bowl, whisk together the olive oil, vinegar, Dijon mustard, and honey.
- Season with salt and pepper.
- Pour the dressing over the vegetables and toss until evenly coated.
- Let sit for 10–15 minutes before serving to allow flavors to meld.
Perfect alongside grilled chicken, fish, pulled pork, or sandwiches. Keeps well in the fridge for up to 2 days.
