Light Cole Slaw


A fresh, crisp side dish made with finely shredded cabbage and carrots, tossed in a light, refreshing dressing rather than a heavy mayo base. Great for BBQ season!

Easy, healthy, and without the guilt.

 

 

Ingredients:

  • 4 cups green cabbage, finely shredded
  • 1 cup purple cabbage, finely shredded (optional)
  • 1 medium carrot, grated

 

For the dressing:

 

Instructions:

  • In a large bowl, combine the shredded cabbage and carrot.
  • In a small bowl, whisk together the olive oil, vinegar, Dijon mustard, and honey.
  • Season with salt and pepper.
  • Pour the dressing over the vegetables and toss until evenly coated.
  • Let sit for 10–15 minutes before serving to allow flavors to meld.

 

Perfect alongside grilled chicken, fish, pulled pork, or sandwiches. Keeps well in the fridge for up to 2 days.
